We are proud to present this Private Estate coffee produced by Julio Cesar Madrid, nicknamed 'Maypop'. Grown at high altitudes on Finca Milan, this coffee underwent carbonic maceration, a novel coffee fermentation technique where a starter yeast or bacterial culture is placed in an airtight environment with the coffee and an energy substrate to develop certain desired aromas and flavor notes for that specific coffee cherry. Julio Madrid and his right hand, Andres Quiceno, are pioneers of culturing. At 92 SCAA, each cup delivers notes of pineapple, lemon, cocoa nib, and myrrh.
