Finca Las Mercedes is nestled in the heart of Costa Rica, among the lush mountains of Tarrazú, which is know for producing some of the world's finest coffees. As third-generation farmers, Mela Gamboa and Luis Rojas nurture every harvest with care and cultivate rich, natural flavors that reflect both tradition and passion.
The honey process begins by carefully removing the skin of the coffee cherry while leaving much of the sticky mucilage intact. As the beans dry with this golden layer still clinging to them, the natural sugars within the mucilage ferment and infuse the coffee with complexity. The result is a sweet, full-bodied cup with balanced fruit notes and a smooth, syrupy finish.
