We are proud to present this Private Estate coffee produced by Juan Pablo, nickname 'Pineapple Honey'. Grown at high altitudes on Finca La Luisa, the coffee cherries are introduced to a pressurized steel tank where CO2 is flushed to create an oxygen-free environment. They are then fermented for five days or 120 hours, during which leached juice from the coffee is recovered. Fermented cherries are then de-pulped and returned to fermentation with the recovered leach mixed with the selected fruit juice for another three days. Finally, the coffee cherries are ready to dry for an additional five days. At 87.5 SCAA, each cup delivers notes of kiwi, pomegranate, pineapple, strawberry, and lychee. Available only in a 3 oz and 16 oz sizes.
