  From the La Hermosa estate in Antigua region, this coffee is carefully washed and sun dried, resulting in a clean, vibrant cup. Expect notes of berry, green apple, jasmine, and lemon with refined clarity.

• Costa Rica Las Mercedes (Red Honey Process)
  From Finca Las Mercedes in Tarrazú, this lot is naturally processed — left to dry inside the cherry skin — to concentrate sweetness and fruit expression. The result: bold fruit notes of pineapple, blackberry and peach, jammy texture, and bright character.

• Dominican Coffee (e.g. Natural Red Honey Processing)
  This coffee illustrates a more classic Caribbean approach — fermented under local conditions to balance fruit-forward notes and gentle acidity. A smooth, approachable profile that bridges the familiar and the exotic.

• Colombia Finca La Pradera (Anaerobic Coffee and Fermentation Coffee)
  This is a standout experimental lot: Oscar Daza’s "Wine Yeast" coffee, dry anaerobically fermented for 72 hours with intact pulp and added passion-fruit pulp + yeast. Expect tropical punch — pineapple, passion fruit — layered with cocoa and sugar-cane sweetness.
